FORTUNE ARRAZ CON GAUNDULES


Try this easy Arraz Con Gaundules recipe!

Method

  1. Wash Fortune Delight Rice until water runs clear.
  2. In a large saucepan over medium heat, sauté bacon until brown and crisp. This takes about 5 minutes.
  3. Remove bacon from the saucepan and transfer it to a plate.
  4. Pour about 1-2 tablespoons oil into the pan then add green chilli sauce and stir for about2-3 minutes. Add onion, garlic and cumin (nkitinkiti) into the pan. Sauté for about a minute.
  5. Stir in rice and continue stirring for about 1-2 minutes. Then add glandules/pigeon peas, tomato sauce, olive, seasoning and water.
  6. Bring to boil and reduce heat; cover with a lid and simmer until rice is cooked. Add salt and pepper to taste. Stir occasionally from the sides to prevent burns and add more water if needed.

Ingredients

  • 2 cups of Fortune Delight Rice (rinsed)
  • 2 slices of bacon (chopped)
  • 3 tablespoons green chili sauce
  • 1 medium-sized onion
  • 1 tablespoon cumin seeds/nkitinkiti
  • 1 can of 15 oz. Glandules/Pigeon Peas (drained)
  • ½ cup of tomato sauce/paste
  • 1/3 cup sliced olives
  • 1 packet of seasoning
  • 3 cups of water
  • Salt and pepper (preferred quantity)
  • Frytol vegetable oil
