FORTUNE JOLLOF DELIGHT
Try this easy Jollof recipe!
Method
- Blend tomatoes, red peppers, and scotch bonnet peppers until smooth.
- Heat oil on medium-high heat, add onions and fry until they turn golden brown. Add tomato paste and fry for 2-3 minutes. Add the blended tomato mixture and fry the mixture with the onions and tomato paste for about 30 minutes. Stir consistently.
- Turn the heat down to medium after 30 minutes, and add the chicken stock. Add seasonings (salt, curry powder, thyme, all-purpose seasoning, and stock cube). Continue to boil for 10 minutes.
- Add Fortune Delight Rice and mix well with the tomato stew. Add water so that the rice is level with the tomato mixture/chicken stock. Add the bay leaves, cover the pot, and cook on medium to low heat. Mix thoroughly every 5 minutes.
- Your Jollof Rice is ready to be eaten when all the grains are soft!
Ingredients
- 2 cups of Fortune Delight Rice
- 5 medium-sized fresh tomatoes (roughly chopped)
- 1 red bell pepper (roughly chopped)
- 1 medium-sized onion (roughly chopped)
- 2 scotch bonnet peppers (habanero peppers/ kpakpo shito)
- ¼ cup of Frytol Vegetable oil
- 3 tablespoon tomato past
- 2 ½ cups of chicken stock
- 1 teaspoon salt to taste
- ½ teaspoon curry powder
- ½ teaspoon thyme
- 1 teaspoon all-purpose seasoning
- 1 stock cube
- 3 bay leaves
- Water, as needed
