FORTUNE JOLLOF DELIGHT



Try this easy Jollof recipe!

Method

  1. Blend tomatoes, red peppers, and scotch bonnet peppers until smooth.
  2. Heat oil on medium-high heat, add onions and fry until they turn golden brown. Add tomato paste and fry for 2-3 minutes. Add the blended tomato mixture and fry the mixture with the onions and tomato paste for about 30 minutes. Stir consistently.
  3. Turn the heat down to medium after 30 minutes, and add the chicken stock. Add seasonings (salt, curry powder, thyme, all-purpose seasoning, and stock cube). Continue to boil for 10 minutes.
  4. Add Fortune Delight Rice and mix well with the tomato stew. Add water so that the rice is level with the tomato mixture/chicken stock. Add the bay leaves, cover the pot, and cook on medium to low heat. Mix thoroughly every 5 minutes.
  5. Your Jollof Rice is ready to be eaten when all the grains are soft!

Ingredients

  • 2 cups of Fortune Delight Rice
  • 5 medium-sized fresh tomatoes (roughly chopped)
  • 1 red bell pepper (roughly chopped)
  • 1 medium-sized onion (roughly chopped)
  • 2 scotch bonnet peppers (habanero peppers/ kpakpo shito)
  • ¼ cup of Frytol Vegetable oil
  • 3 tablespoon tomato past
  • 2 ½ cups of chicken stock
  • 1 teaspoon salt to taste
  • ½ teaspoon curry powder
  • ½ teaspoon thyme
  • 1 teaspoon all-purpose seasoning
  • 1 stock cube
  • 3 bay leaves
  • Water, as needed
