Try this easy Loco Fortune Moco recipe!

Method

  1. In a large bowl, combine the beef, chopped onion, garlic, teaspoons Worcestershire sauce/ soy and ketchup mixture, 1 teaspoon of salt and 1/2 teaspoon pepper.
    Mix with your hands or a wooden ladle. Mound into 4 patties about 1/2 inch thick. Place the patties on a plate and cover them with plastic wrap and transfer them to a refrigerator for 20 minutes.
  2. Heat 1 tablespoon of oil in a large saucepan over medium heat. When the oil is hot and shimmering, add the sliced onion and sauté, stirring occasionally until almost translucent. (5-7 minutes).
    Reduce the heat and continue cooking until soft and caramelized for about 10 minutes. Transfer to a bowl and set aside.
  3. Add 1 tablespoon of oil to the skillet and place over medium heat. When the oil is hot, swirl the pan around to evenly coat it, then gently place the patties in the pan, spacing them out evenly.
    Cook until browned for about 4 minutes per side. Using a spatula, transfer patties to a clean plate to cool.
  4. Add the remaining tablespoon oil to the pan and heat over medium heat until hot. Add the mushrooms and sauté until tender, for about 10 minutes. Season the mushrooms with salt and pepper, then add the caramelized onions, beef broth/stock, soy sauce and the remaining 1 teaspoon Worcestershire sauce / soy sauce and Ketchup mixture and bring to a simmer. Reduce the heat to medium.
  5. Place the corn starch in a small bowl. Add 2 tablespoons of the broth/stock from the saucepan and whisk until smooth. Stir the corn starch slurry into the saucepan and simmer until the sauce has thickened for 5 to 7 minutes.
  6. Place 1 cup of steamed Fortune Delicious rice on each plate and top serving with one patty, gravy, fried egg and chopped spring onions.

Ingredients

  • 4 cups of steamed Fortune Delicious rice
  • 1-pound ground beef
  • 1 medium-sized onion, peeled
  • ¼ of the onion chopped; ¼ sliced
  • 2 garlic cloves peeled and finely grated
  • 3 spoons of Worcestershire sauce/ soy sauce and ketchup mixture
  • 1 tablespoon of salt (preferred quantity)
  • 1/2 tablespoon of black pepper
  • 2½ tablespoons of neutral oil
  • 8 ounces’ mushrooms cleaned and sliced
  • 2 cups of beef broth/ stock
  • 2 teaspoons soy sauce
  • 4 eggs, fried, sunny side up
  • 2 spring onions chopped for garnishing
